Instructions
- Prepare the mascarpone mixture: In a large mixing bowl, beat the mascarpone cheese until smooth. In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form. Gently fold the whipped cream into the mascarpone mixture, then stir in the melted white chocolate and vanilla extract until fully combined.
- Soak the ladyfingers: Briefly dip each ladyfinger cookie into the raspberry juice or raspberry liqueur, ensuring they are soaked but not soggy.
- Layer the dessert: Arrange half of the soaked ladyfingers in the bottom of an 8×8-inch dish. Spread half of the mascarpone mixture over the ladyfingers, then evenly scatter half of the fresh raspberries on top. Repeat with the remaining ladyfingers, mascarpone mixture, and raspberries.
- Chill: Cover the dish and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the tiramisu to set.
- Garnish and serve: Before serving, garnish the tiramisu with white chocolate shavings and fresh mint leaves if desired. Serve chilled for best flavor and texture.
