  • 2 tablespoons nutritional yeast

  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon ground black pepper
  • 2 cups vegetable broth
  • 1/2 cup unsweetened plant-based milk (almond, soy, or oat)


Instructions

  1. Prepare Cashews: Drain the soaked cashews and set them aside to be blended later.
  2. Sauté Onion and Garlic: In a medium skillet, heat olive oil over medium heat. Add the finely chopped onion and sauté for 4 to 5 minutes until translucent. Add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.
  3. Blend Ingredients: Transfer the cooked onions and garlic into a blender. Add the drained cashews, nutritional yeast, soy sauce or tamari, onion powder, dried thyme, salt, black pepper, vegetable broth, and unsweetened plant-based milk. Blend on high speed until the mixture is completely smooth and creamy.
  4. Simmer Gravy: Pour the blended mixture back into the skillet. Simmer over medium-low heat for 5 to 7 minutes, stirring occasionally, until the gravy is heated through and has slightly thickened to your desired consistency.
  5. Adjust Seasoning and Serve: Taste the gravy and adjust seasoning if necessary. Serve warm over your favorite dishes such as mashed potatoes, roasted vegetables, or vegan biscuits.
