- 1 cup raw cashews (soaked in hot water for 15 minutes)
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons nutritional yeast
- 1 tablespoon soy sauce or tamari
- 1 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon ground black pepper
- 2 cups vegetable broth
- 1/2 cup unsweetened plant-based milk (almond, soy, or oat)
Instructions
- Prepare Cashews: Drain the soaked cashews and set them aside to be blended later.
- Sauté Onion and Garlic: In a medium skillet, heat olive oil over medium heat. Add the finely chopped onion and sauté for 4 to 5 minutes until translucent. Add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.
- Blend Ingredients: Transfer the cooked onions and garlic into a blender. Add the drained cashews, nutritional yeast, soy sauce or tamari, onion powder, dried thyme, salt, black pepper, vegetable broth, and unsweetened plant-based milk. Blend on high speed until the mixture is completely smooth and creamy.
- Simmer Gravy: Pour the blended mixture back into the skillet. Simmer over medium-low heat for 5 to 7 minutes, stirring occasionally, until the gravy is heated through and has slightly thickened to your desired consistency.
- Adjust Seasoning and Serve: Taste the gravy and adjust seasoning if necessary. Serve warm over your favorite dishes such as mashed potatoes, roasted vegetables, or vegan biscuits.
