Ingredients
Scale
Chicken
- 1 pound boneless, skinless chicken breasts (about 2 large breasts)
Marinade
- â…“ cup plain Greek yogurt
- ¼ cup olive oil
- 4 lemons (juice and zest)
- 4-5 cloves garlic, pressed or minced
- 2 tablespoons dried oregano
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Instructions
- Prepare the Marinade: In a medium bowl, combine the plain Greek yogurt, olive oil, juice and zest of all 4 lemons, pressed or minced garlic, dried oregano, kosher salt, and freshly ground black pepper. Whisk thoroughly until smooth and well incorporated.
- Marinate the Chicken: Place the boneless, skinless chicken breasts in a resealable plastic bag or shallow dish. Pour the prepared marinade over the chicken, ensuring all pieces are well coated. Seal or cover, then refrigerate for at least 30 minutes, preferably 2-4 hours, or overnight for maximum flavor infusion.
- Cook the Chicken: Preheat a grill or oven to medium-high heat. If grilling, cook the chicken breasts for about 6-7 minutes per side or until the internal temperature reaches 165°F (74°C) and juices run clear. If baking, preheat the oven to 400°F (204°C) and bake the chicken breasts on a baking sheet for approximately 20-25 minutes, or until fully cooked.
- Rest and Serve: Once cooked, transfer the chicken to a plate and let it rest for 5 minutes to retain juices. Serve warm with your choice of sides such as Greek salad, rice pilaf, or roasted vegetables.
Notes
- For tender and flavorful results, marinate the chicken for at least 2 hours.
- Use fresh lemons for the best citrus flavor.
- Make sure to cook chicken until the internal temperature reaches 165°F (74°C) for food safety.
- This marinade works well with chicken thighs or drumsticks as a substitute.
- If baking, line the baking sheet with parchment paper for easier cleanup.
