Description

A flavorful and comforting Teriyaki Chicken Casserole that combines tender chicken, savory teriyaki sauce, rice, and mixed vegetables baked to perfection in a simple one-dish meal.

Ingredients

Scale

Teriyaki Sauce:

  • 2 cloves garlic, minced
  • ½ cup soy sauce
  • 1 cup water
  • 1 teaspoon ground ginger
  • ¼ cup brown sugar

Main Ingredients:

  • 2 cups cooked chicken, diced
  • 1 cup white rice, cooked
  • 1 package frozen stir-fry mixed vegetables, prepared

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and grease a baking dish to prevent sticking and make cleanup easier.
  2. Make Teriyaki Sauce: In a skillet over medium-low heat, combine water, soy sauce, minced garlic, ground ginger, and brown sugar. Let it simmer for about 5 minutes, stirring occasionally, until the sauce thickens and the flavors meld beautifully.
  3. Combine Ingredients: Remove the skillet from the heat, then stir in the diced cooked chicken, cooked white rice, and prepared frozen stir-fry vegetables. Mix everything evenly to coat all ingredients with the teriyaki sauce.
  4. Bake: Transfer the mixture into the greased baking dish and spread it out evenly. Bake in the preheated oven for 30 minutes until the casserole is heated through and flavors are well blended.

Notes

  • Use cooked rotisserie chicken or leftover chicken for convenience.
  • Frozen mixed vegetables should be thawed and drained for best texture.
  • Serve with additional soy sauce or garnish with sesame seeds and chopped green onions if desired.
  • Can be made ahead and refrigerated before baking; increase baking time slightly if baking from chilled.
