Instructions
- Preheat and Bake Tater Tots: Preheat your oven to 400°F (200°C). Spread the frozen tater tots in a single layer on a baking sheet, drizzle with olive oil, and bake for 20-25 minutes, flipping them halfway through, until they are golden brown and crispy.
- Cook Sausage and Vegetables: While the tater tots bake, heat a large skillet over medium heat. Add the breakfast sausage, breaking it up as it cooks. Once browned, drain off any excess grease. Add the chopped onion and bell pepper to the skillet and cook until they soften, about 5-7 minutes. Season with salt and pepper.
- Prepare Egg Mixture: In a large bowl, whisk together the eggs and milk until well combined. Season with salt and pepper to taste.
