Instructions
- Cook the Strawberries: In a small saucepan, combine the strawberries and water. Cook over medium heat until the strawberries are soft, about 5–7 minutes.
- Puree the Mixture: Use an immersion blender or transfer the cooked strawberries to a blender and puree until smooth.
- Combine Ingredients: Pour the strawberry puree back into the saucepan and stir in the lemon juice and honey or maple syrup.
- Dissolve Gelatin: Sprinkle the gelatin over the warm mixture and whisk constantly until it is completely dissolved, about 2–3 minutes. Avoid boiling to preserve gelatin’s setting properties.
- Set the Gummies: Pour the mixture into silicone candy molds or a parchment-lined baking dish. Refrigerate for at least 1 hour, or until firm.
- Finish and Coat: Once set, remove the gummies from the molds or cut into bite-size pieces. Mix granulated sugar and citric acid in a small bowl, then toss the gummies lightly in the mixture before serving.
