Instructions

  3. Combine Ingredients: Pour the strawberry puree back into the saucepan and stir in the lemon juice and honey or maple syrup.
  4. Dissolve Gelatin: Sprinkle the gelatin over the warm mixture and whisk constantly until it is completely dissolved, about 2–3 minutes. Avoid boiling to preserve gelatin’s setting properties.
  5. Set the Gummies: Pour the mixture into silicone candy molds or a parchment-lined baking dish. Refrigerate for at least 1 hour, or until firm.
  6. Finish and Coat: Once set, remove the gummies from the molds or cut into bite-size pieces. Mix granulated sugar and citric acid in a small bowl, then toss the gummies lightly in the mixture before serving.
