Description

These Taco Pot Pies are a fun and delicious twist on classic tacos, combining seasoned ground beef, black beans, corn, and salsa in a savory filling, all topped with cheddar cheese and enclosed in a golden, flaky pizza dough crust. Perfect for a quick family meal, these individual pot pies bake to perfection in just 25 minutes.

  • 1 lb ground beef
  • 1 (1-oz) package taco seasoning
  • â…“ cup water
  • ½ cup salsa
  • 1 (15-oz) can black beans, drained and rinsed
  • ½ cup corn kernels

Topping and Crust

  • 4 (1-oz) cheddar cheese slices
  • 1 (13.8-oz) can refrigerated pizza dough
  • Cooking spray for ramekins


Instructions

  1. Preheat Oven: Preheat your oven to 425ºF (220ºC). Spray four ramekins thoroughly with cooking spray, including the rims to prevent sticking, and set them aside.
  2. Prepare the Filling: In a large skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat, then return the beef to the skillet. Stir in the taco seasoning, water, and salsa, then simmer the mixture for 5 minutes to blend the flavors. Add the drained black beans and corn kernels, stirring to combine evenly.
  3. Assemble in Ramekins: Evenly distribute the taco beef mixture among the prepared ramekins. Top each ramekin’s filling with one slice of cheddar cheese.
  4. Prepare Dough Topping: Roll out the refrigerated pizza dough and cut it into four roughly equal rectangles. Place each dough piece over the ramekin top, allowing the dough to hang slightly over the edges to seal in the filling.
  5. Bake and Serve: Place the ramekins on a baking sheet and bake in the preheated oven for about 15 minutes, or until the dough turns golden brown and crisp. Remove from oven, carefully invert each ramekin onto a plate to release the pot pie, and gently lift off the ramekin. Serve warm.

Notes

  • Make sure to spray the entire ramekin including the rim to allow easy removal of the pot pie after baking.
  • Use refrigerated pizza dough for convenience, but homemade dough can also be substituted for a fresher flavor.
  • You can customize the filling by adding diced onions, bell peppers, or jalapeños for extra flavor and heat.
  • Leftover pot pies can be refrigerated and reheated in a 350ºF oven until warmed through and crust is crisp again.
