Instructions
- Cook the Ground Beef: In a skillet over medium heat, brown the ground beef. Drain any excess fat, then stir in taco seasoning and water. Simmer the mixture for 3–5 minutes until it thickens, then remove the skillet from heat.
- Fry the Tortillas: Heat about 1/4 inch of vegetable oil in a separate pan over medium-high heat. Fry each tortilla for approximately 30 seconds on each side until they become crispy and golden brown. Drain the fried tortillas on paper towels to remove excess oil.
- Preheat Oven: Set your oven to 400°F (200°C) to prepare for baking the assembled pizzas.
- Assemble the Mexican Pizzas: On a baking sheet, place two of the crispy tortillas. Spread a layer of refried beans evenly over each, then top with the seasoned ground beef. Cover with the remaining two tortillas to form a sandwich.
- Add Sauce and Cheese: Spread enchilada sauce over the tops of the assembled tortillas and sprinkle shredded Mexican cheese blend generously on top.
- Bake: Bake the pizzas in the preheated oven for 5–7 minutes until the cheese is melted and bubbly.
- Garnish and Serve: Remove the pizzas from the oven, top with diced tomatoes, sliced black olives, and chopped green onions. Slice the pizzas and serve them warm for best flavor.
