Description

These Super Soft Rice Krispie Treats are a delightful twist on the classic snack, featuring a creamy blend of butter and sweetened condensed milk combined with melted mini marshmallows and crispy rice cereal. Light, chewy, and irresistibly sweet, they are perfect for a quick treat or party dessert, requiring no baking and only 15 minutes of active preparation.

Ingredients

Scale

Wet Ingredients

  • ¼ cup butter
  • ½ cup sweetened condensed milk
  • 1 tsp vanilla extract

Marshmallows

  • 1 (10-oz) bag mini marshmallows
  • 1 cup mini marshmallows

Dry Ingredients

  • 6 cups Rice Krispies cereal

Instructions

  1. Prepare the Pan: Grease an 8×8×2-inch pan with cooking spray or softened butter, then line it with parchment paper leaving a few inches of overhang to make it easier to lift out the treats later.
  2. Melt Butter: In a large pot or Dutch oven over medium heat, melt the butter completely.
  3. Add Sweetened Condensed Milk: Stir in the sweetened condensed milk with the melted butter until fully combined.
  4. Melt Marshmallows: Add the entire 10-ounce bag of mini marshmallows and stir continuously until they melt down into a smooth, creamy mixture. Remove the pot from heat once melted.
  5. Combine Ingredients: Carefully stir in the vanilla extract, followed by the 6 cups of Rice Krispies cereal and the additional 1 cup of mini marshmallows, mixing gently but thoroughly to evenly coat the cereal.
  6. Transfer to Pan: Pour the mixture into the prepared pan. Press down gently with a spatula or your hands—do not overpack—to ensure the treats hold together without becoming too dense.
  7. Chill and Set: Place the pan in the refrigerator for 1 to 2 hours until the treats are cool and firm enough to cut.
  8. Cut and Serve: Using the parchment paper overhang, lift the set treats out of the pan and cut into 16 equal squares. Serve and enjoy!

Notes

  • For best results, do not overpack the cereal when pressing into the pan to keep the treats light and soft.
  • Using sweetened condensed milk enhances the creaminess and softness compared to traditional butter-and-marshmallow-only recipes.
  • Store leftover treats in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
  • You can add mix-ins like chocolate chips or nuts if desired, but be mindful of altering the texture.
