Strawberry Layer

  • 440 g fresh strawberries
  • 40 ml pure maple syrup

Yogurt Layer

  • 200 g coconut yogurt (or other non-dairy yogurt)
  • 150 g chilled full-fat canned coconut milk
  • 60 ml pure maple syrup
  • 1 teaspoon vanilla extract


Instructions

  1. Prepare Strawberry Layer: Wash the strawberries thoroughly, remove the stems, and cut them into quarters. Place your popsicle molds on a tray that fits into your freezer for easy handling.
  2. Blend Strawberries: Add the quartered strawberries and 40 ml of pure maple syrup to a high-speed blender or food processor. Blend until the mixture is completely smooth.
  3. Fill Molds with Strawberry Mixture: Pour the strawberry puree evenly into 10 popsicle molds. Cover the molds and freeze them for about 1 hour or until the strawberry layer is set firmly enough to hold the next layer.
  4. Prepare Yogurt Layer: Combine the coconut yogurt, chilled canned coconut milk, 60 ml pure maple syrup, and vanilla extract in the blender or food processor. Blend until the mixture is smooth and creamy.
  5. Pipe Yogurt Layer: Transfer the yogurt mixture into a piping bag. Pipe it carefully on top of the partially frozen strawberry layer in each mold. Insert a wooden stick through the center of each popsicle, applying gentle pressure so it goes through the strawberry layer.
  6. Freeze Completely: Place the filled molds back into the freezer and freeze the popsicles for 4 hours or until fully set.
  7. Unmold Popsicles: To remove the popsicles easily, run the molds under warm water for 10-20 seconds making sure not to let water enter the molds. Gently pull the popsicles out.
  8. Store: Keep the popsicles stored in an airtight container in the freezer for up to 3 months for best freshness.
