- Make the Crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand. Press this mixture evenly into the bottom of a 9-inch pie dish, firmly packing it down with the back of a spoon. Bake for 8-10 minutes until golden brown, then remove from the oven and allow to cool completely.
- Prepare the Strawberry Filling: Toss the fresh strawberries with 1/4 cup granulated sugar in a medium bowl and let sit for 15-20 minutes to release their juices and create a syrup. In a separate large bowl, beat the softened cream cheese with powdered sugar until smooth and creamy. Add the heavy whipping cream, vanilla extract, and lemon juice if using, then beat the mixture until thick and fluffy. Finally, gently fold in the syrupy strawberries until well combined.
- Assemble the Pie: Pour the strawberry filling evenly into the cooled graham cracker crust. Spread it out smoothly. Refrigerate the pie for at least 3-4 hours, preferably overnight, allowing it to set firmly.
