Ingredients

Scale

Refried Beans

  • 2 tablespoons vegetable oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 2 (16-ounce) cans pinto beans, undrained
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Turkey Filling

  • 1 pound ground turkey

Extras and Assembly

  • 2 cups shredded cheese
  • 3 cups cooked white rice
  • 8 flour or corn tortillas
  • Sour cream
  • 1 bunch fresh cilantro, chopped
  • 1 (16-ounce) jar tomato salsa
  • Lime juice (optional)

Instructions

  1. Sauté onions and garlic: Heat vegetable oil in a large skillet over medium-high heat. Add diced onion and minced garlic, cooking until translucent, about 2 to 3 minutes, to develop a flavorful base.
  2. Cook beans: Add undrained pinto beans, ground cumin, chili powder, garlic powder, onion powder, paprika, dried oregano, salt, and pepper to the skillet. Bring mixture to a simmer and cook for 7 to 10 minutes until beans soften. Use a potato masher to partially mash the beans, then continue cooking for an additional 5 to 10 minutes until the beans thicken to a creamy consistency.
  3. Cook ground turkey: In a separate skillet, cook ground turkey over medium-high heat. Break the meat up with a wooden spoon and add the remaining spices for seasoning. Cook until the turkey is browned and cooked through, approximately 5 minutes. Remove from heat.
  4. Prepare ingredients: Divide the cooked white rice and shredded cheese into two medium-sized bowls for easy assembly. Warm the tortillas by placing them in a dry skillet for about 30 seconds on each side to make them more pliable.
  5. Assemble burritos: Lay a warmed tortilla flat on a clean surface. Layer the turkey, refried beans, cooked rice, and shredded cheese in a line down the center. Top with sour cream, tomato salsa, chopped fresh cilantro, and a squeeze of lime juice if desired. Fold the bottom edge of the tortilla up, fold in the sides, and roll tightly to enclose the filling. Repeat this process with the remaining tortillas and ingredients.
  6. Serve: Serve the burritos immediately while warm and enjoy the blend of Southern-inspired flavors.

Notes

  • Use either flour or corn tortillas according to your preference.
  • For extra heat, add diced jalapeños or hot sauce to the filling.
  • The lime juice is optional but adds a nice zest and freshness to balance the rich flavors.
  • Leftover burritos can be wrapped in foil and refrigerated for up to 3 days.
  • To reheat, microwave wrapped burritos or warm them in a skillet until heated through.
