Sour Melon Base

  • 1 medium ripe honeydew, cubed
  • 2 limes, zested
  • 2/3 cup lime juice (about 4 medium limes)
  • 1/2 cup loosely packed mint leaves

To Serve

  • Sparkling water or club soda
  • Ice
  • Lime wedges, for garnish
  • Honeydew balls, for garnish
  • Fresh mint sprigs, for garnish


Instructions

  1. Blend the sour melon base: In a blender, combine the cubed honeydew, lime zest, lime juice, and mint leaves. Blend on medium-high speed for about 2 minutes until the mixture is smooth and frothy.
  2. Strain and store: Pour the blended mixture through a fine mesh sieve or nut milk bag over a bowl to strain out the solids. Transfer the clear concentrate into a jar and refrigerate until ready to use.
  3. Prepare the spritzer: When ready to serve, fill a glass halfway with ice. Garnish with lime wedges, honeydew balls, and fresh mint. Pour 1/2 cup of the sour melon concentrate over the ice.
  4. Add sparkling water: Top off with 1/2 cup of sparkling water or club soda. Stir gently to combine all flavors.
