Description

A delicious and easy-to-make Shrimp & Cheese Grilled Sandwich featuring sautéed seasoned shrimp and melted mozzarella cheese, perfectly toasted between slices of buttery sourdough bread. This quick recipe delivers a savory seafood twist on the classic grilled cheese, perfect for a satisfying lunch or dinner.

Ingredients

Scale

Shrimp Mixture

  • 8 oz shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • A pinch of red pepper flakes (optional)

Sandwich

  • 1 cup shredded mozzarella cheese (or any melting cheese)
  • 4 slices of sourdough or thick-cut bread
  • 1 tablespoon butter (for toasting)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the Shrimp: Heat the olive oil in a skillet over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant. Add the shrimp, season with salt, pepper, and Italian seasoning, then sauté for 3-4 minutes until the shrimp turns pink and is cooked through. Remove from heat and set aside.
  2. Assemble the Sandwich: Spread a thin layer of butter on one side of each slice of bread. On the unbuttered side of one slice, spread half of the shredded mozzarella cheese. Layer the sautéed shrimp evenly over the cheese, then sprinkle the remaining cheese on top. Place the second slice of bread on top, buttered side facing out.
  3. Grill the Sandwich: Preheat a skillet or griddle over medium heat. Place the sandwich in the skillet and grill for about 3-4 minutes until the bread is golden and crispy and the cheese starts melting. Flip the sandwich and cook the other side for another 3-4 minutes until golden brown and the cheese is fully melted.
  4. Serve: Remove the sandwich from the skillet, garnish with fresh chopped parsley and a pinch of red pepper flakes if desired. Serve hot and enjoy your flavorful shrimp and cheese grilled sandwich.

Notes

  • Use any melting cheese of your choice if mozzarella is not available.
  • For extra heat, add more red pepper flakes or a dash of hot sauce.
  • Sourdough bread or any thick-cut artisan bread works best for a crispy exterior and sturdy sandwich.
  • Make sure not to overcook the shrimp to keep it tender and juicy.
