Instructions
- Make the scrambled eggs: Crack the eggs into a bowl, then whisk them with a pinch of salt and pepper until fully combined.
- Heat the skillet and melt butter: Heat a nonstick skillet over medium-low heat and melt 1 tablespoon of butter.
- Cook the eggs: Pour the eggs into the skillet, and allow them to set slightly. Then, gently stir the eggs with a spatula until they form soft curds. Remove from heat when they’re just slightly underdone as they will continue to cook off heat.
- Prepare the sandwich assembly area: While the eggs cook, heat another skillet or griddle over medium heat.
- Butter the bread: Butter one side of each slice of bread with about 1 tablespoon of butter.
- Add cheese: Place the cheese slices between the unbuttered sides of the bread to form the sandwich.
- Grill the sandwich: Place the sandwiches buttered side down in the hot skillet. Grill for 2-3 minutes per side, or until the bread is golden and crispy and the cheese has melted.
- Add scrambled eggs to sandwich: Remove the sandwich from the skillet, open it slightly, and add the scrambled eggs. Then close the sandwich.
