Ingredients
Scale
Carrots
- 1½ pounds carrots, peeled and halved lengthwise
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
Ricotta Topping
- 1 cup whole milk ricotta cheese
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons hot honey, plus more for drizzling
- 1 tablespoon chopped fresh parsley or chives (optional)
Instructions
- Preheat and prepare carrots: Preheat your oven to 425°F (220°C). Place the peeled and halved carrots on a baking sheet, then drizzle with olive oil, and season with salt and black pepper. Toss to evenly coat the carrots.
- Roast the carrots: Spread the carrots in a single layer on the baking sheet. Roast them in the preheated oven for 25 to 30 minutes, flipping the carrots once halfway through cooking until they become tender and caramelized.
- Prepare whipped ricotta: While the carrots are roasting, combine ricotta, lemon juice, lemon zest, and 1 tablespoon of hot honey in a food processor or mixing bowl. Blend or whip the mixture until it is smooth and fluffy, creating a light and airy ricotta topping.
- Assemble the dish: Once the carrots are done roasting, spread the whipped ricotta on a serving platter or divide it onto individual plates. Arrange the roasted carrots on top.
- Finish and garnish: Drizzle additional hot honey over the carrots and ricotta to add a sweet and spicy kick. Garnish with chopped fresh parsley or chives if desired, and serve immediately.
Notes
- You can make the whipped ricotta ahead of time and store it in the fridge to save prep time.
- For an extra layer of flavor, toss the carrots with a pinch of cumin or smoked paprika before roasting.
- Adjust the amount of hot honey to your spice preference, using store-bought or homemade versions.
