Ingredients
Scale
Base Ingredients
- 6 cups Rice Krispies cereal
- 1/4 cup unsalted butter
- 1 (10 oz) bag mini marshmallows
Flavor Additions
- 1/4 cup canned pumpkin purée (not pumpkin pie filling)
- 1/2 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon ground cinnamon (optional for extra spice)
Optional Decorations
- White chocolate drizzle
- Candy corn
Instructions
- Prepare the Pan: Grease a 9×13-inch baking dish with butter or non-stick spray and set it aside to prevent sticking when the mixture is pressed in.
- Melt the Butter and Marshmallows: In a large pot over medium-low heat, melt the butter. Once melted, add the mini marshmallows and stir constantly until they are fully melted and the mixture is smooth and shiny.
- Add Pumpkin and Spices: Stir in the canned pumpkin purée, vanilla extract, pumpkin pie spice, and cinnamon if using. Continue stirring for about one minute to allow some moisture to evaporate and the flavors to meld.
- Mix in the Cereal: Remove the pot from heat. Quickly fold in the Rice Krispies cereal until all the cereal is evenly coated with the marshmallow-pumpkin mixture.
- Press into the Pan: Using a buttered spatula or greased hands, gently press the mixture evenly into the prepared baking dish. Be careful not to compress the treats too much to keep them light and chewy.
- Cool and Cut: Let the treats cool completely at room temperature for about 30 minutes to firm up before cutting into squares.
- Optional Decorations: For a festive look, drizzle melted white chocolate over the top or sprinkle with candy corn before the treats set.
Notes
- Use canned pumpkin purée, not pumpkin pie filling, to avoid adding extra sugar and spices.
- Press the mixture gently into the pan for a chewy texture; over-compressing may result in hard treats.
- The cinnamon is optional but enhances the warm spice flavor.
- Store the treats in an airtight container at room temperature for up to 2 days for best freshness.
- For a vegan version, use vegan marshmallows and a plant-based butter substitute.
