Crust

  • 2/3 cup sour cream

Instructions

  1. Prepare the crust: Preheat the oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter until fully mixed. Firmly press this mixture into the bottom of a 9-inch springform pan to form the crust.
  2. Bake the crust: Place the springform pan in the oven and bake for 10 minutes. Remove and let cool completely. Wrap the outside of the pan with aluminum foil to prevent water from seeping in during the water bath step.
  3. Make the filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add 1 cup sugar and vanilla extract, mixing thoroughly. Add the eggs one at a time, beating on low speed after each addition until just combined. Gently fold in the sour cream and heavy cream until the batter is smooth and consistent.
  4. Assemble and bake the cheesecake: Pour the filling over the cooled crust. Place the springform pan inside a large roasting pan and pour hot water into the roasting pan until it reaches halfway up the side of the springform pan, creating a water bath for even baking. Bake for 60–70 minutes, or until the center is slightly jiggly but the edges are set.
  5. Cool the cheesecake: Turn off the oven, slightly crack the oven door, and let the cheesecake cool inside the oven for 1 hour to prevent cracking.
  6. Chill before serving: Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight to set fully before slicing and serving.
