Description

Sautéed Mushroom Mixture

  • 2 cups mushrooms, sliced (button or cremini mushrooms work well)
  • 1 medium onion, thinly sliced
  • 2 tablespoons butter (for sautéing)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon thyme (optional)
  • Salt and pepper, to taste

Sandwich Assembly

  • 4 slices sourdough or any hearty bread
  • 4 slices of cheese (Swiss, cheddar, or mozzarella)
  • 2 tablespoons butter (for grilling)


Instructions

  1. Sauté the Mushrooms: In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat.
  2. Cook Mushrooms and Onions: Add the sliced mushrooms and onions to the skillet and sauté until the mushrooms release their moisture and turn golden brown, about 7-10 minutes.
  3. Add Garlic and Thyme: Stir in the minced garlic and thyme (if using), cooking for an additional 1-2 minutes until fragrant.
  4. Season: Season with salt and pepper to taste. Remove the mixture from heat and set aside.
  5. Assemble the Sandwiches: Lay out the slices of bread on a clean surface. Spoon the sautéed mushroom and onion mixture evenly onto two slices of bread. Place a slice of cheese on top of each mushroom pile, then crown with the remaining bread slices.
  6. Prepare to Grill: Heat a nonstick skillet or griddle over medium-low heat. Butter the outside of the assembled sandwiches with the remaining 1-2 tablespoons of butter.
  7. Grill the Sandwiches: Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  8. Serve: Remove the sandwiches from the skillet once crispy and golden. Cut in half and serve immediately for best flavor.
