Sautéed Mushroom Mixture
- 2 cups mushrooms, sliced (button or cremini mushrooms work well)
- 1 medium onion, thinly sliced
- 2 tablespoons butter (for sautéing)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon thyme (optional)
- Salt and pepper, to taste
Sandwich Assembly
- 4 slices sourdough or any hearty bread
- 4 slices of cheese (Swiss, cheddar, or mozzarella)
- 2 tablespoons butter (for grilling)
Instructions
- Sauté the Mushrooms: In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat.
- Cook Mushrooms and Onions: Add the sliced mushrooms and onions to the skillet and sauté until the mushrooms release their moisture and turn golden brown, about 7-10 minutes.
- Add Garlic and Thyme: Stir in the minced garlic and thyme (if using), cooking for an additional 1-2 minutes until fragrant.
- Season: Season with salt and pepper to taste. Remove the mixture from heat and set aside.
- Assemble the Sandwiches: Lay out the slices of bread on a clean surface. Spoon the sautéed mushroom and onion mixture evenly onto two slices of bread. Place a slice of cheese on top of each mushroom pile, then crown with the remaining bread slices.
- Prepare to Grill: Heat a nonstick skillet or griddle over medium-low heat. Butter the outside of the assembled sandwiches with the remaining 1-2 tablespoons of butter.
- Grill the Sandwiches: Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Serve: Remove the sandwiches from the skillet once crispy and golden. Cut in half and serve immediately for best flavor.
Notes
- You can use any type of hearty bread you prefer; sourdough adds great flavor and texture.
- For a vegan version, substitute butter with plant-based margarine and cheese with vegan cheese slices.
- Adding thyme is optional but gives a lovely aromatic flavor.
- To make it spicier, add a pinch of chili flakes when sautéing mushrooms.
- Use fresh mushrooms for best taste, but you can also use frozen if necessary (just thaw and drain excess moisture).
