Ingredients
Scale
Salmon
- 4 salmon fillets (6 oz each)
- Salt and pepper, to taste
- 2 tablespoons olive oil
Sauce
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated parmesan cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the salmon: Pat the salmon fillets dry and season both sides generously with salt and pepper to enhance their natural flavor.
- Sear the salmon: Heat the olive oil in a large skillet over medium heat. Place the salmon fillets skin side down and cook for 4-5 minutes until the skin is crisp and golden brown. Flip and cook the other side for another 4-5 minutes until cooked through. Remove the salmon from the skillet and set aside.
- Sauté garlic: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant but not browned, releasing its aromatic flavor.
- Deglaze the skillet: Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet with a wooden spoon. Let it simmer for 2-3 minutes to reduce slightly and concentrate the flavors.
- Make the sauce: Stir in the heavy cream, grated parmesan cheese, chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes if using. Allow the sauce to simmer gently for 3-4 minutes, stirring occasionally, until it thickens to a creamy consistency.
- Finish cooking the salmon in the sauce: Return the seared salmon fillets to the skillet, spoon the sauce over them, and let everything simmer together for another 2-3 minutes to heat through and meld the flavors.
- Garnish and serve: Sprinkle with fresh chopped parsley for a pop of color and fresh taste. Serve immediately with your favorite sides such as steamed vegetables or rice.
Notes
- For a dairy-free version, substitute heavy cream with coconut milk and parmesan with nutritional yeast.
- Use skinless salmon if you prefer, but cook carefully to avoid sticking.
- Adjust red pepper flakes to taste to control spice level.
- Pair with a crisp white wine like Sauvignon Blanc for an elevated dining experience.
- Leftovers keep well refrigerated for up to 2 days, reheat gently on stovetop to avoid drying the salmon.
