  • ¼ cup freshly squeezed lemon juice
  • 2 tablespoons butter
  • ½ cup reserved pasta water

Finishing

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to package directions until al dente. Reserve ½ cup of the pasta cooking water, then drain the pasta and set aside.
  2. Sauté the shrimp: Heat olive oil in a large skillet over medium heat. Place shrimp in a single layer and cook for 1 to 2 minutes per side, until they turn pink and opaque. Remove shrimp from the skillet and set aside.
  3. Prepare the sauce: In the same skillet, add minced garlic and red pepper flakes if using. Sauté for about 30 seconds until fragrant, being careful not to burn the garlic. Stir in the lemon zest, lemon juice, butter, and reserved pasta water. Allow the mixture to simmer gently for 1 to 2 minutes to blend the flavors.
  4. Combine and finish: Add the cooked pasta, shrimp, and grated Parmesan cheese back into the skillet. Toss everything together until well combined and thoroughly heated. Season with salt and black pepper to taste.
