Description

This Lemon-Herb Baked Cod recipe features tender, flaky cod fillets infused with bright lemon and fragrant herbs. Baked to perfection with a drizzle of olive oil and a hint of spice, it’s a light and flavorful meal perfect for a healthy weeknight dinner.

Ingredients

Scale

Fish and Herb Seasoning

  • 4 cod fillets (about 6 ounces each)
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Other

  • 2 lemons, thinly sliced
  • 2 tablespoons olive oil
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to prepare for baking the cod fillets.
  2. Prepare the cod fillets: Pat the cod fillets dry with paper towels to remove excess moisture. This helps the seasoning stick better and ensures even cooking.
  3. Season the fish: Place the cod fillets on a baking dish or sheet. Drizzle olive oil over the fillets, then evenly sprinkle dried oregano, dried thyme, garlic powder, red pepper flakes (if using), salt, and pepper. Rub the seasoning gently into the fish.
  4. Add lemon slices: Arrange the thin lemon slices over and around the cod fillets. The lemon will infuse the fish with a fresh citrus aroma while baking.
  5. Bake the cod: Place the baking dish in the preheated oven. Bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
  6. Garnish and serve: Remove from oven and garnish with freshly chopped parsley. Serve immediately with your preferred side dishes.

Notes

  • You can substitute fresh herbs for dried herbs if available, using about three times the amount.
  • Be sure not to overcook the cod; cooking time depends on thickness but generally 15-20 minutes is sufficient.
  • Optional red pepper flakes add a mild heat; omit if you prefer no spice.
  • Serve with steamed vegetables or a light salad for a complete meal.
  • To make the dish gluten-free, ensure all spices and seasonings are certified gluten-free.
