Ingredients
Scale
Sandwich Ingredients
- 4 slices sourdough or Italian bread
- 1 cup cooked shredded or sliced chicken (leftover or rotisserie)
- 1/2 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons softened butter
- 1/2 teaspoon dried Italian seasoning
- Salt and pepper to taste
Instructions
- Prepare the Butter Spread: In a small bowl, mix the softened butter with the dried Italian seasoning until well combined. This seasoned butter will add an herby and buttery flavor to the bread while grilling.
- Assemble the Sandwiches: Spread the seasoned butter evenly on one side of each bread slice. Place two bread slices on a clean surface, buttered side down. On each of these slices, layer half of the mozzarella cheese, half of the cooked chicken, a few spoonfuls of marinara sauce, a sprinkle of Parmesan cheese, and then the remaining mozzarella cheese. Top each with the remaining bread slices, ensuring the buttered side is facing up.
- Cook the Sandwiches: Heat a nonstick skillet or griddle over medium heat. Place the sandwiches on the skillet and cook for 3 to 4 minutes per side. Gently press each sandwich with a spatula while cooking to ensure even grilling and melting. Cook until the bread is golden brown and crispy, and the cheese inside is melted thoroughly.
- Serve Warm: Remove the sandwiches from the skillet, slice them in half if desired, and serve immediately. Offer extra marinara sauce on the side for dipping to add a tangy complement to the rich, cheesy interior.
Notes
- For extra crispiness, sprinkle a little Parmesan cheese on the outside of the bread before grilling.
- You can substitute mozzarella with provolone or use a cheese blend for a different flavor profile.
- This recipe is an excellent way to utilize leftover chicken to make a delicious new meal.
