Lamb Chops

  • 8 lamb chops
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced

Lobster Mash

  • 1 lb potatoes, peeled and cubed
  • 1 cup lobster meat, cooked and chopped
  • 1/2 cup milk
  • 4 tbsp butter
  • 1/4 cup grated Parmesan cheese

  • 1 bunch asparagus, trimmed


Instructions

  1. Prepare Potatoes: Place peeled and cubed potatoes in a large pot and cover with cold water. Bring to a boil over high heat, then reduce to medium and simmer until tender, about 15-20 minutes.
  2. Cook Asparagus: While the potatoes cook, bring a separate pot of water to a boil. Blanch the trimmed asparagus for 2-3 minutes until bright green and tender-crisp. Drain and set aside.
  3. Mash Potatoes: Drain the potatoes well and return to the pot. Add butter, milk, grated Parmesan cheese, and chopped lobster meat. Mash everything together until smooth and creamy. Season with salt and pepper to taste.
  4. Season Lamb Chops: Pat lamb chops dry and season both sides generously with salt, pepper, minced garlic, and chopped rosemary.
  5. Sear Lamb Chops: Heat olive oil in a skillet over medium-high heat. Add lamb chops and sear for 3-4 minutes on each side, or until desired doneness (medium-rare to medium recommended). Remove from skillet and let rest for 5 minutes.
