This KFC Bowl Casserole Recipe combines crispy popcorn chicken, creamy mashed potatoes, sweet corn, savory chicken gravy, and melted cheddar cheese into a comforting, easy-to-make layered casserole perfect for a family meal.
Ingredients
Scale
Chicken
- 1 ½ lb popcorn chicken (frozen or freshly made)
Mashed Potatoes
- 2 envelopes instant mashed potatoes (prepared according to package instructions)
Vegetables
- 31 oz can whole kernel corn, drained
Dairy
- 2 cups shredded cheddar cheese
Sauces & Gravy
- 12 oz chicken gravy
Instructions
- Cook Chicken and Potatoes: Cook the popcorn chicken according to the package directions until fully cooked and crispy. Meanwhile, prepare the instant mashed potatoes as per the package instructions ensuring they are creamy and smooth.
- Layer Ingredients: Preheat your oven to 400°F (200°C). Lightly grease a 9×13 inch baking dish. Spread the prepared mashed potatoes evenly on the bottom of the dish. Next, layer the drained whole kernel corn evenly over the mashed potatoes. Then, arrange the cooked popcorn chicken in an even layer on top of the corn.
- Bake the Casserole: Place the assembled casserole in the preheated oven and bake uncovered for 15 minutes, allowing the layers to heat through and meld together.
- Add Cheese and Gravy: Remove the casserole from the oven and sprinkle the shredded cheddar cheese evenly over the chicken layer. Return the casserole to the oven and bake for an additional 5 minutes or until the cheese has melted and is bubbly.
- Finish with Gravy: While the cheese melts, heat the chicken gravy on the stovetop or in the microwave until warm. Once the casserole is ready, pour the heated gravy evenly over the top and serve warm.
Notes
- You can use freshly made popcorn chicken instead of frozen for a homemade touch.
- If you prefer, substitute instant mashed potatoes with homemade mashed potatoes for richer flavor.
- Adjust cheese type or quantity based on your preference—monterey jack or mozzarella would also work.
- The chicken gravy can be replaced with mushroom or brown gravy for variation.
- For a spicier dish, add some black pepper or paprika to the chicken before baking.
