Description

This Honey Dijon Rosemary Baked Chicken recipe combines the sweetness of honey with the tangy kick of Dijon mustard and the aromatic flavor of fresh rosemary, resulting in tender, juicy chicken breasts baked to perfection. Perfect for a quick and flavorful weeknight dinner, this dish is easy to prepare and pairs well with a variety of sides.

Ingredients

Scale

Sauce Ingredients

  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons whole grain Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce (or tamari or omit for gluten-free)
  • 2 cloves garlic, minced or grated
  • Salt and pepper to taste
  • 1/2 cup chicken broth (or water)

Chicken

  • 1 pound boneless skinless chicken breasts (or chicken thighs)
  • 2-3 sprigs of fresh rosemary

Instructions

  1. Mix the sauce: In a bowl, combine the honey, Dijon mustard, whole grain Dijon mustard, apple cider vinegar, soy sauce, minced garlic, salt, pepper, and chicken broth. Stir well to blend all the flavors into a smooth sauce.
  2. Toss chicken with sauce: Place the boneless skinless chicken breasts into a baking dish and pour the prepared sauce over them. Toss gently to ensure each piece is evenly coated with the sauce.
  3. Add rosemary: Arrange 2 to 3 sprigs of fresh rosemary between the chicken pieces in the dish, so the herb’s aroma infuses the meat during baking.
  4. Bake the chicken: Preheat your oven to 350°F (180°C). Bake the chicken in the oven until it reaches an internal temperature of 165°F (75°C), approximately 25 to 35 minutes, depending on thickness. This ensures the chicken is cooked through and juicy.
  5. Serve with pan sauce: Once baked, remove the rosemary sprigs if desired, and spoon some of the flavorful pan sauce over the chicken before serving to add extra moisture and taste.

Notes

  • Use chicken thighs instead of breasts if you prefer darker meat with more fat and flavor.
  • For a gluten-free version, omit the soy sauce or use tamari.
  • Make sure not to overcook the chicken to keep it moist and tender.
  • You can serve this chicken with rice, roasted vegetables, or a fresh salad for a complete meal.
  • Fresh rosemary is preferred for the best flavor, but dried rosemary can be used in a pinch (use about 1 teaspoon dried).
