Description

This homemade granola bar recipe is a delicious and easy-to-make snack combining buttery sweetness, crunchy oats, crispy cereal, and delightful mix-ins like mini chocolate chips and marshmallows. Ready in under 3 hours, including chilling time, these bars are perfect for a quick breakfast or on-the-go treat.

Ingredients

Scale

Wet Ingredients

  • 6 tablespoons unsalted butter
  • 6 tablespoons brown sugar, packed
  • 2/3 cup honey

Dry Ingredients

  • 3 cups rolled oats
  • 1 1/2 cups Rice Krispies cereal
  • 1/2 cup graham crackers, crushed
  • 1/2 teaspoon salt

Mix-ins

  • 1/2 cup mini chocolate chips
  • 1/2 cup cereal marshmallows

Instructions

  1. Prepare Pan: Spray an 8×8 inch pan with vegetable oil and line the bottom with parchment paper to prevent sticking and make removal easier.
  2. Melt Ingredients: In a pot over medium heat, melt the unsalted butter, brown sugar, and honey together. Bring the mixture to a gentle bubble and cook for 2 minutes to incorporate the flavors and slightly thicken.
  3. Mix Dry Ingredients: In a large bowl, combine the rolled oats, Rice Krispies cereal, crushed graham crackers, and salt. Pour the melted butter and honey mixture over the dry ingredients and mix thoroughly until everything is evenly coated. Let the mixture cool for about 20 minutes to prevent melting the mix-ins in the next step.
  4. Add Mix-Ins and Press: Gently fold in the mini chocolate chips and cereal marshmallows, being careful not to crush them. Transfer the mixture into the prepared pan and press firmly to create an even layer.
  5. Chill and Slice: Refrigerate the pan for at least 2 hours to allow the bars to set properly. Once firm, remove from the pan, slice into 16 bars, and serve or store in an airtight container.

Notes

  • For chewier bars, press the mixture firmly into the pan.
  • You can substitute honey with maple syrup for a different flavor.
  • Store bars in an airtight container at room temperature for up to one week or in the refrigerator for longer freshness.
  • Feel free to add nuts or dried fruit for additional texture and flavor.
  • If parchment paper is unavailable, lightly grease the pan to prevent sticking.
