Ingredients
Scale
Fish
- 4 white fish fillets (such as cod or tilapia)
- 2 teaspoons lemon juice
- Salt and black pepper to taste
Vegetables and Seasoning
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 orange bell pepper, sliced
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
Garnish and Serving
- Fresh parsley for garnish
- Lemon wedges for serving
Instructions
- Preheat Oven and Prepare Baking Dish: Preheat the oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper to prevent sticking and make cleanup easier.
- Toss Bell Peppers with Seasonings: In a large bowl, combine the sliced red, yellow, and orange bell peppers with olive oil, minced garlic, dried thyme, dried basil, dried oregano, and a pinch of salt and black pepper. Toss well to coat all the peppers evenly with the herbs and oil.
- Assemble in Baking Dish: Spread the seasoned bell peppers evenly in the prepared baking dish to create a flavorful base layer.
- Season Fish Fillets: Place the white fish fillets on top of the peppers. Season the fish with salt, black pepper, and drizzle with lemon juice for a bright, fresh flavor.
- Bake the Dish: Bake in the preheated oven for 15–20 minutes. The fish is done when it flakes easily with a fork and the peppers have softened but still retain some texture.
- Garnish and Serve: Remove from the oven and garnish with fresh parsley. Serve with lemon wedges on the side to squeeze over the fish for added zest.
Notes
- You can use any firm white fish such as cod, tilapia, haddock, or halibut for this recipe.
- For a bit of heat, add a pinch of crushed red pepper flakes when tossing the bell peppers with the olive oil and herbs.
- This dish pairs wonderfully with sides like steamed rice, quinoa, or roasted potatoes to make a complete meal.
