Instructions
- Preheat Oven and Prepare Pans: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper to ensure cookies bake evenly and don’t stick.
- Cream Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, which helps create a tender texture in the cookies.
- Add Egg and Vanilla: Beat in the egg and vanilla extract until the mixture is well combined, incorporating moisture and flavor.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt to evenly distribute leavening and seasoning.
- Mix Dry and Wet Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms, ensuring not to overwork it for a tender cookie.
- Form Cookie Balls: Roll the dough into 1-inch balls and arrange them on the prepared baking sheets with about 2 inches space between to allow spreading.
- Create Heart Indentations: Use your thumb or the back of a small spoon to gently press a heart-shaped indentation into the center of each cookie ball, making space for the jam.
- Fill with Jam: Spoon about 1/2 teaspoon of seedless raspberry or strawberry jam into each heart indentation carefully without overfilling.
- Bake the Cookies: Bake in the preheated oven for 12–14 minutes, or until the edges just begin to turn golden, indicating they are fully baked.
- Cool the Cookies: Remove from oven; let the cookies cool on the baking sheets for 5 minutes to firm up, then transfer to a wire rack to cool completely.
