Description

Celebrate Halloween with these festive and delicious Halloween Shredded Chicken & Rice Stuffed Peppers. Colorful bell peppers are carved like jack-o-lanterns, boiled until tender, and then stuffed with a flavorful mixture of Mexican rice, shredded chicken, black beans, and cheddar cheese. Baked until the cheese melts and the peppers are soft, this recipe makes a perfect spooky yet hearty meal for your Halloween gathering.

Ingredients

Scale

Vegetables

  • 4 bell peppers (orange, green, or your choice of color)

Filling

  • 2 cups Mexican rice (cooked)
  • 1 shredded chicken breast (cooked)
  • 1 can black beans, rinsed and drained
  • 1 cup shredded cheddar cheese

Instructions

  1. Prepare the Bell Peppers: Preheat your oven to 350°F (175°C). Rinse the bell peppers thoroughly. Slice off the tops and remove the seeds and white membranes from the inside. For a fun Halloween touch, carve jack-o-lantern faces into each pepper.
  2. Boil the Peppers: Bring a large pot of water to a boil. Submerge the hollowed peppers and their tops in the boiling water for about 5 minutes. This softens the peppers while keeping them firm enough to hold the filling. Remove them carefully and let them cool slightly.
  3. Mix the Filling: In a large bowl, combine the cooked Mexican rice, shredded chicken breast, rinsed black beans, and 1 cup of shredded cheddar cheese. Mix thoroughly to combine all ingredients evenly.
  4. Stuff the Peppers: Fill each boiled pepper with the chicken and rice mixture, packing the filling gently inside. For extra cheesiness and flavor, sprinkle additional shredded cheddar cheese on top of each filled pepper. Place the pepper tops back onto each stuffed pepper.
  5. Bake: Arrange the stuffed peppers upright in a baking dish. Bake in the preheated oven for 30 minutes or until the cheese on top has melted and the peppers are tender to the touch.
  6. Serve: Remove the peppers from the oven and let cool slightly before serving. Enjoy these spooky jack-o-lantern stuffed peppers at your Halloween party or family dinner!

Notes

  • Choose bell peppers of different colors for a vibrant platter.
  • Make sure not to overboil the peppers to retain their shape and texture.
  • Use cooked rice and chicken prepared ahead of time for convenience.
  • For a spicier kick, add diced jalapeños or chili powder to the filling mix.
  • This recipe can be made vegetarian by omitting the chicken and adding extra beans or vegetables.
