Instructions
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat.
- Cook Onion: Add chopped onion and cook for 3-4 minutes, until softened and translucent.
- Add Garlic: Stir in minced garlic and cook for 1 minute, until fragrant.
- Cook the Turkey: Add ground turkey to the skillet, breaking it apart with a spatula. Cook for 5-7 minutes until browned and fully cooked through.
- Add Veggies & Chickpeas: Stir in diced zucchini, drained chickpeas, ground cumin, smoked paprika, salt, and black pepper.
- Simmer: Cook for 5-7 minutes, stirring occasionally, until the zucchini is tender but not mushy.
- Garnish & Serve: Remove the skillet from heat, sprinkle with fresh chopped parsley, and serve warm.
