Ingredients
Scale
Chicken and Seasoning
- 2 pounds boneless, skinless chicken thighs
- 1 tablespoon olive oil (or vegetable oil)
- 3 tablespoons Thai seasoning (store-bought or homemade blend)
Glaze
- ¼ cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon sriracha
- 1 tablespoon fresh cilantro, chopped
Instructions
- Preheat the Grill: Preheat your grill to medium-high heat, approximately 400°F (204°C) to ensure it is hot and ready for cooking the chicken evenly.
- Prepare the Chicken: Rub the olive oil evenly over the chicken thighs, then sprinkle the Thai seasoning all over the chicken to coat each piece thoroughly for maximum flavor.
- Make the Glaze: In a small bowl, whisk together the sweet chili sauce, soy sauce, lime juice, sriracha, and chopped fresh cilantro until well combined. Set the glaze aside for later use.
- Grill the Chicken: Place the seasoned chicken thighs on the preheated grill and cook for 5 to 6 minutes per side, allowing the chicken to develop a nice char while cooking through.
- Apply the Glaze: During the last 2 minutes of grilling, generously brush half of the prepared glaze onto the chicken pieces to build flavor and caramelize slightly.
- Rest the Chicken: Remove the chicken from the grill once the internal temperature reaches 160°F (71°C). Brush the remaining glaze over the chicken and allow it to rest on a cutting board for 5 minutes—the temperature will rise slightly, completing the cooking process.
- Serve: Slice or dice the rested chicken as desired and serve immediately, optionally garnished with extra fresh cilantro or lime wedges.
Notes
- Ensure your grill is properly preheated to achieve a nice sear and prevent sticking.
- You can substitute boneless, skinless chicken breasts if thighs are not preferred, but adjust grilling time accordingly.
- Thai seasoning can be homemade or store-bought; common spices include garlic, coriander, cumin, and chili powder.
- Check the internal temperature of the chicken with a meat thermometer to ensure safe cooking.
- Leftover glazed chicken makes a great addition to salads, wraps, or rice bowls.
