Description

This Grilled Thai Chicken recipe features juicy, marinated boneless, skinless chicken thighs coated with a flavorful Thai seasoning blend, grilled to perfection, and glazed with a tangy and spicy sweet chili sauce mixture. Perfect for a quick and tasty weeknight dinner, it combines savory, sweet, and citrusy flavors with a hint of heat from sriracha and fresh cilantro.

Ingredients

Scale

Chicken and Seasoning

  • 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon olive oil (or vegetable oil)
  • 3 tablespoons Thai seasoning (store-bought or homemade blend)

Glaze

  • ¼ cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon sriracha
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. Preheat the Grill: Preheat your grill to medium-high heat, approximately 400°F (204°C) to ensure it is hot and ready for cooking the chicken evenly.
  2. Prepare the Chicken: Rub the olive oil evenly over the chicken thighs, then sprinkle the Thai seasoning all over the chicken to coat each piece thoroughly for maximum flavor.
  3. Make the Glaze: In a small bowl, whisk together the sweet chili sauce, soy sauce, lime juice, sriracha, and chopped fresh cilantro until well combined. Set the glaze aside for later use.
  4. Grill the Chicken: Place the seasoned chicken thighs on the preheated grill and cook for 5 to 6 minutes per side, allowing the chicken to develop a nice char while cooking through.
  5. Apply the Glaze: During the last 2 minutes of grilling, generously brush half of the prepared glaze onto the chicken pieces to build flavor and caramelize slightly.
  6. Rest the Chicken: Remove the chicken from the grill once the internal temperature reaches 160°F (71°C). Brush the remaining glaze over the chicken and allow it to rest on a cutting board for 5 minutes—the temperature will rise slightly, completing the cooking process.
  7. Serve: Slice or dice the rested chicken as desired and serve immediately, optionally garnished with extra fresh cilantro or lime wedges.

Notes

  • Ensure your grill is properly preheated to achieve a nice sear and prevent sticking.
  • You can substitute boneless, skinless chicken breasts if thighs are not preferred, but adjust grilling time accordingly.
  • Thai seasoning can be homemade or store-bought; common spices include garlic, coriander, cumin, and chili powder.
  • Check the internal temperature of the chicken with a meat thermometer to ensure safe cooking.
  • Leftover glazed chicken makes a great addition to salads, wraps, or rice bowls.
