Ingredients
Scale
Chicken
- 1 ½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and black pepper to taste
- 1 teaspoon Italian seasoning
Cooking
- 2 tablespoons olive oil
- 8 ounces cremini or white mushrooms, sliced
- 4 cloves garlic, minced
- 2 tablespoons unsalted butter
- 1 tablespoon fresh chopped parsley (optional, for garnish)
Instructions
- Season Chicken: Season the chicken pieces with salt, pepper, and Italian seasoning to ensure they are well-flavored before cooking.
- Cook Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5–7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Sauté Mushrooms: In the same skillet, add the remaining tablespoon of olive oil and the sliced mushrooms. Sauté for 4–5 minutes until the mushrooms become browned and tender.
- Add Garlic and Butter: Add the butter and minced garlic to the skillet, stirring for about 1 minute until the garlic is fragrant, enhancing the flavor of the mushrooms.
- Combine Chicken and Mushrooms: Return the cooked chicken to the skillet and toss everything together to coat the chicken in the garlic butter and mushrooms.
- Final Cook: Cook for an additional 1–2 minutes, allowing the flavors to meld and warming the entire dish through.
- Garnish and Serve: Garnish with fresh parsley if desired, and serve warm over your choice of rice, pasta, or with steamed vegetables.
Notes
- This dish pairs excellently with rice, pasta, or a side of steamed vegetables to create a complete meal.
- Chicken thighs can be substituted for chicken breasts if a juicier texture is preferred.
- For an extra boost of flavor, consider adding a splash of white wine when sautéing the mushrooms.
