Batter Ingredients

  • 2 cups of milk
  • 1 egg
  • 2 teaspoons of vanilla extract

  • 6 tablespoons of butter, melted

Frying & Serving

  • Vegetable oil (for frying, about half an inch deep)

Instructions

  1. Prepare the wet ingredients: In a medium-sized bowl, combine the milk, egg, vanilla extract, and melted butter, mixing until well blended.
  2. Add dry ingredients: Incorporate the pinch of salt, baking soda, and sugar into the wet mixture, stirring thoroughly to combine.
  3. Mix in flour: Gradually fold in the all-purpose flour, mixing gently until the batter is smooth without lumps.
  4. Transfer batter: Pour the batter into a gallon-sized Ziplock bag and set aside to rest for a few minutes.
  5. Heat oil: Pour vegetable oil into a frying pan until about half an inch deep. Heat the oil over high heat for 2 minutes, then reduce to medium heat.
  6. Test oil temperature: Drop a small amount of batter into the oil; if bubbles form around it, the oil is ready. Adjust heat as necessary to maintain temperature.
  7. Fry the bites: Cut a small hole in the corner of the Ziplock bag and pipe the batter into 1 to 2 small circles in the hot oil. Cook until the bottom side is golden brown.
  8. Flip and cook other side: Using a slotted metal spatula, gently flip the cake bites to cook the other side until golden brown as well.
  9. Drain excess oil: Remove the cooked bites and place them on paper towels to soak up any extra grease.
  10. Serve: Sprinkle the warm funnel cake bites with powdered sugar and optionally top with whipped cream or fresh fruit. Serve immediately for best taste.
