Description

This Easy Shrimp Vegetable Skillet is a quick and flavorful one-pan meal perfect for busy weeknights. Featuring tender shrimp seasoned with Cajun spices and sautéed alongside fresh zucchini and bell peppers, this dish delivers a healthy balance of protein and vibrant vegetables in just 25 minutes.

Ingredients

Scale

Shrimp and Seasoning

  • 1 pound shrimp
  • 2 cloves garlic, minced
  • 1 ½ tablespoons Cajun seasoning, divided
  • 2 tablespoons olive oil, divided

Vegetables

  • 1 large zucchini, sliced
  • 2 bell peppers, cubed

Instructions

  1. Toss shrimp: In a bowl, combine the shrimp with 1 tablespoon of olive oil, minced garlic, and ½ tablespoon of Cajun seasoning. Mix well to evenly coat the shrimp and set the mixture aside, allowing the flavors to marinate briefly.
  2. Cook vegetables: Heat the remaining 1 tablespoon of olive oil in a large pan over medium heat. Add the sliced zucchini and cubed bell peppers, sprinkle with the remaining 1 tablespoon of Cajun seasoning, and sauté the vegetables for 4-5 minutes until they are tender-crisp. Remove the vegetables from the pan and transfer them to a bowl to keep warm.
  3. Cook shrimp: In the same pan, add the seasoned shrimp and cook for about 5 minutes, stirring occasionally, until the shrimp turn pink and are cooked through.
  4. Combine: Return the cooked vegetables to the pan with the shrimp and cook together for an additional 3-4 minutes, stirring occasionally, until everything is heated through and flavors meld. Serve warm for a delicious and easy meal.

  • Substitute other vegetables like asparagus or snap peas if desired.
  • Serve with rice, quinoa, or crusty bread for a complete meal.
  • To make it gluten-free, ensure your Cajun seasoning does not contain gluten ingredients.
