Instructions

  1. Prepare the filling: Heat olive oil in a skillet over medium heat. Add the finely chopped onion and garlic, sautéing until softened and translucent, about 3-4 minutes. Then add the chicken sausage (or ground chicken), cooking until browned and cooked through, breaking it up with a spoon as it cooks.
  2. Combine ingredients: Remove the skillet from heat. In a large bowl, combine the cooked chicken mixture, breadcrumbs, fresh chopped sage, cranberry sauce, Dijon mustard, salt, and pepper. Mix thoroughly to combine all the flavors evenly.
  3. Prepare puff pastry: On a lightly floured surface, roll out the puff pastry sheet into a rectangular shape approximately 12×10 inches. Spread the sausage filling evenly along one long edge of the pastry, leaving some space at the edges.
  4. Roll and seal: Carefully roll the pastry over the filling to form a log. Seal the edges by pressing gently with a fork. Cut the roll into 12 equal pieces and place them seam side down on a baking tray lined with parchment paper.
