Sausage Filling
- 1 lb (450g) chicken sausage (or ground chicken)

- 1 clove garlic, minced
- 1 tbsp Dijon mustard
- Salt and pepper, to taste

- 1 egg, beaten (for egg wash)
Instructions
- Prepare the filling: Heat olive oil in a skillet over medium heat. Add the finely chopped onion and garlic, sautéing until softened and translucent, about 3-4 minutes. Then add the chicken sausage (or ground chicken), cooking until browned and cooked through, breaking it up with a spoon as it cooks.
- Combine ingredients: Remove the skillet from heat. In a large bowl, combine the cooked chicken mixture, breadcrumbs, fresh chopped sage, cranberry sauce, Dijon mustard, salt, and pepper. Mix thoroughly to combine all the flavors evenly.
- Prepare puff pastry: On a lightly floured surface, roll out the puff pastry sheet into a rectangular shape approximately 12×10 inches. Spread the sausage filling evenly along one long edge of the pastry, leaving some space at the edges.
- Roll and seal: Carefully roll the pastry over the filling to form a log. Seal the edges by pressing gently with a fork. Cut the roll into 12 equal pieces and place them seam side down on a baking tray lined with parchment paper.
- Apply egg wash: Brush the tops of the sausage rolls with the beaten egg to give a beautiful golden color when baked.
- Bake: Preheat the oven to 400°F (200°C) and bake the sausage rolls for 20-25 minutes, or until the pastry is puffed and golden brown and the filling is cooked through.
