Instructions
- Brown the Beef: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Brown the beef tips in batches for 2–3 minutes per side until nicely seared, then transfer the browned beef to the crockpot.
- Sauté Aromatics: In the same skillet, add chopped onion and minced garlic, sauté for 2–3 minutes until softened and fragrant. Then transfer the onions and garlic to the crockpot with the beef.
- Add Liquids and Seasonings: Pour in 1 cup beef broth, 1/2 cup red wine (if using), 2 tablespoons Worcestershire sauce, 1 tablespoon soy sauce, then add 1 teaspoon dried thyme, 1 teaspoon paprika, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Stir gently to combine all ingredients in the crockpot.
- Cook Low and Slow: Cover the crockpot and cook on low for 7–8 hours or on high for 4–5 hours until the beef is tender and flavorful.
- Thicken the Sauce: About 30 minutes before the end of cooking, mix 2 tablespoons cornstarch with 2 tablespoons water in a small bowl to form a slurry. Stir this slurry into the crockpot to thicken the sauce, then continue cooking until the sauce has thickened.
- Serve and Garnish: Serve the beef tips hot over mashed potatoes, rice, or egg noodles. Garnish with chopped parsley if desired for a fresh finish.
