Description

This Crispy Cheesy Chicken Quesadilla recipe combines juicy shredded chicken seasoned with a flavorful blend of spices, melty cheddar and Monterey Jack cheeses, and crispy tortillas for a quick and satisfying meal. Perfect for a tasty lunch or dinner, it’s easy to prepare and customizable with your favorite toppings.

Ingredients

Scale

Chicken and Seasoning

  • 2 large chicken breasts, cooked and shredded
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Cheese and Tortillas

  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded Monterey Jack cheese
  • 4 flour tortillas (8-inch)
  • 2 tablespoons unsalted butter, melted

Optional Toppings

  • Sour cream
  • Salsa
  • Guacamole
  • Cilantro

Instructions

  1. Prepare the Chicken: In a bowl, toss the shredded cooked chicken with olive oil, garlic powder, onion powder, chili powder, cumin, salt, and pepper until evenly coated with the seasoning.
  2. Assemble the Quesadilla: Lay one flour tortilla flat on a clean surface. Sprinkle a layer of shredded cheddar and Monterey Jack cheese evenly over half of the tortilla. Top the cheese with a generous portion of the seasoned shredded chicken, then add another layer of cheese on top. Fold the tortilla over to cover the fillings, creating a half-moon shape.
  3. Cook the Quesadilla: Heat a large skillet or non-stick pan over medium heat. Brush the skillet with a little melted butter or directly brush the outer side of the folded quesadilla with melted butter. Place the quesadilla in the skillet and cook for about 3 to 4 minutes on each side, or until the tortilla is golden brown and crispy and the cheese inside has melted entirely.
  4. Serve: Remove the quesadilla from the skillet and let it rest for a minute before slicing it into wedges. Serve hot with optional toppings such as sour cream, salsa, guacamole, or fresh cilantro for extra flavor.

Notes

  • Use pre-cooked chicken or leftover chicken to save time.
  • Adjust the seasoning spices to suit your taste or add a pinch of cayenne for more heat.
  • To achieve extra crispy tortillas, cook on medium-low heat and use butter instead of oil.
  • Can be made with whole wheat or gluten-free tortillas if desired.
