Instructions
- Prepare the Chicken: In a bowl, toss the shredded cooked chicken with olive oil, garlic powder, onion powder, chili powder, cumin, salt, and pepper until evenly coated with the seasoning.
- Assemble the Quesadilla: Lay one flour tortilla flat on a clean surface. Sprinkle a layer of shredded cheddar and Monterey Jack cheese evenly over half of the tortilla. Top the cheese with a generous portion of the seasoned shredded chicken, then add another layer of cheese on top. Fold the tortilla over to cover the fillings, creating a half-moon shape.
- Cook the Quesadilla: Heat a large skillet or non-stick pan over medium heat. Brush the skillet with a little melted butter or directly brush the outer side of the folded quesadilla with melted butter. Place the quesadilla in the skillet and cook for about 3 to 4 minutes on each side, or until the tortilla is golden brown and crispy and the cheese inside has melted entirely.
- Serve: Remove the quesadilla from the skillet and let it rest for a minute before slicing it into wedges. Serve hot with optional toppings such as sour cream, salsa, guacamole, or fresh cilantro for extra flavor.
