Description

These creamy ice cream bars are a simple and delicious homemade frozen treat made with rich heavy cream, whole milk, and pure vanilla extract. Perfectly sweetened and frozen to perfection, they provide a smooth and satisfying vanilla flavor that’s ideal for dessert or a refreshing snack on a warm day.

Ice Cream Base

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • 1/4 teaspoon salt

Equipment

  • 8 wooden popsicle sticks
  • 8 bar molds or small rectangular containers


Instructions

  1. Prepare the Ice Cream Mixture: In a large bowl, whisk together the heavy cream, whole milk, sugar, vanilla extract, and salt until the sugar is completely dissolved and the mixture is smooth.
  2. Fill the Molds: Evenly pour the cream mixture into each of the 8 bar molds or small rectangular containers, filling them nearly to the top but leaving space for expansion during freezing.
  3. Insert Popsicle Sticks: Place a wooden popsicle stick into the center of each mold or container. Ensure the sticks stand upright and are secure.
  4. Freeze: Place the molds in the freezer and let them freeze for at least 6 hours, or until the bars are completely solid and firm to the touch.
  5. Remove Bars from Molds: To easily release the ice cream bars, briefly run warm water over the outside of the molds to loosen the edges. Gently pull the bars out by the sticks.
  6. Serve or Store: Serve the ice cream bars immediately for best texture, or store them in an airtight container in the freezer for later enjoyment.

Notes

  • For extra flavor, fold in small chocolate chips, crushed cookies, or fresh fruit pieces into the mixture before freezing.
  • Using full-fat dairy products, such as heavy cream, ensures a rich and creamy texture.
  • If you do not have dedicated ice cream bar molds, use small disposable containers covered with foil. Poke the popsicle sticks through the foil to hold them upright while freezing.
