Bread & Finishing

  • 2 cloves garlic, peeled (for rubbing on toasted bread)

  1. Prepare the Tomato Mixture: In a bowl, combine the diced tomatoes, minced garlic, chopped red onion, balsamic vinegar, extra virgin olive oil, kosher salt, freshly ground black pepper, and chopped basil. Mix well and set aside for 10 minutes to allow the flavors to meld.
  2. Slice the Bread: Cut the baguette into 1/2 inch thick slices to create evenly sized pieces for toasting.
  3. Prepare for Toasting: Arrange the bread slices on a baking tray and lightly spray with olive oil to promote crispiness and golden color.
  4. Toast the Bread: Place the tray under the broiler (oven broiler) and toast the bread slices until golden brown. Watch carefully to prevent burning, as broilers cook quickly.
