Description

The Blooming Burrito Ring is a fun and flavorful twist on a classic burrito, perfect for sharing. This recipe layers seasoned shredded chicken, refried beans, and melted cheese inside soft flour tortillas, which are then arranged in a blooming ring shape and baked to melty perfection. A delightful presentation paired with salsa makes it an ideal appetizer or party dish.

Ingredients

Scale

Chicken Filling

  • 4-5 cups shredded chicken
  • 1 packet of taco seasoning
  • ½ cup water

Tortilla Ring

  • 10 soft taco size flour tortillas
  • 15 ounce can of refried beans
  • 1 cup shredded cheese (cheddar or Mexican blend recommended)

Instructions

  1. Preheat oven: Warm your oven to 350°F (175°C) to prepare for baking the burrito ring.
  2. Flavor the chicken: In a bowl, combine the shredded chicken with the taco seasoning and ½ cup of water. Mix thoroughly to coat the chicken evenly with the seasoning.
  3. Slice tortillas: Take each soft flour tortilla and slice it into halves, creating manageable pieces for filling and rolling.
  4. Fill tortillas: On the center of each tortilla half, place a spoonful of refried beans, a portion of the seasoned chicken, and sprinkle with shredded cheese.
  5. Roll tortillas: Carefully roll each filled tortilla half into a neat cone shape, ensuring the filling is securely inside.
  6. Prepare dish: Lightly coat a pie dish or skillet with nonstick spray. Place a small bowl in the center of the dish to act as a guide for arranging the tortilla cones.
  7. Layer tortillas: Arrange the rolled tortilla cones closely around the small bowl in the dish, forming a circular ring.
  8. Add cheese: Sprinkle half of the remaining shredded cheese evenly over the first layer of tortilla cones.
  9. Layer more cones: Add a second layer of rolled tortilla cones on top of the first layer, again forming a ring, and sprinkle the last of the cheese over them.
  10. Bake: Remove the guiding bowl from the center. Bake the assembled burrito ring for 20 minutes at 350°F (175°C), or until the cheese is melted and bubbly.
  11. Serve: Present the baked burrito ring with a bowl of salsa in the center for dipping. Serve warm and enjoy!

Notes

  • Use any shredded chicken, either rotisserie or cooked at home.
  • Refried beans can be substituted with black beans or pinto beans if preferred.
  • Cheese varieties like cheddar, Monterey Jack, or a Mexican cheese blend work best for melting.
  • For extra flavor, add chopped onions or peppers to the chicken mixture before filling the tortillas.
  • To make it spicier, include jalapeños or hot sauce in the filling.
  • Nonstick spray helps prevent sticking and makes removal easier.
  • Serve with additional toppings such as sour cream, guacamole, or chopped cilantro for enhanced taste.
