Ingredients
Scale
Sausage and Vegetables
- 1 lb beef smoked sausage, sliced into rounds
- 1 medium onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
Rice
- 1 ½ cups long-grain white rice
- 3 cups chicken broth (or water)
Seasoning
- Salt and pepper to taste
- 1 teaspoon paprika
- ½ teaspoon garlic powder (optional)
- Fresh parsley (optional, for garnish)
Instructions
- Cook the Rice: In a medium pot, bring 3 cups of chicken broth or water to a boil. Stir in the rice, then reduce the heat to low. Cover and simmer gently for 18-20 minutes or until the rice is tender and the liquid is fully absorbed. Once done, set the rice aside and keep covered to stay warm.
- Sauté the Vegetables and Sausage: While the rice cooks, heat 2 tablespoons of olive oil in a large skillet or pan over medium heat. Add the sliced smoked sausage rounds to the pan and cook for 4-5 minutes, allowing them to brown and develop a slightly crispy edge. Remove the sausage from the skillet and set aside. In the same skillet, add the thinly sliced onion, red bell pepper, and yellow bell pepper. Cook the vegetables for 5-7 minutes, stirring occasionally, until they become tender and begin to caramelize.
- Add Garlic and Seasoning: Add the minced garlic to the skillet with the vegetables, cooking for an additional minute until fragrant. Season the mixture with salt, pepper, 1 teaspoon of paprika, and if using, ½ teaspoon of garlic powder. Stir well to combine all the flavors evenly.
- Combine the Sausage and Rice: Return the cooked sausage to the skillet with the seasoned vegetables. Stir everything together and cook for 2-3 minutes more to heat all the ingredients through and allow flavors to meld.
- Serve: Plate the prepared sausage and vegetable mixture over the fluffy cooked rice. Garnish with freshly chopped parsley, if desired, for a burst of color and freshness. Serve immediately and enjoy this hearty, flavorful meal.
Notes
- You can substitute chicken broth with water for a lighter version, but broth adds more flavor to the rice.
- Feel free to add other bell pepper colors or vegetables like mushrooms or zucchini for variety.
- For a spicier kick, add a pinch of crushed red pepper flakes when sautéing the garlic.
- Leftovers store well in the fridge for up to 3 days and reheat easily in a skillet or microwave.
- To make this dish low sodium, use low-sodium broth and limit added salt.
