Instructions
- Prepare the oven and baking sheet: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
- Cook the apple filling: In a medium saucepan over medium heat, combine the diced apples, lemon juice, brown sugar, cinnamon, nutmeg, cornstarch, and water. Cook for 5–7 minutes, stirring often, until the apples become tender and the mixture thickens. Remove from heat and let it cool slightly.
- Soften the rice paper wrappers: Fill a shallow dish with warm water. Soak one rice paper wrapper at a time for 10–15 seconds until softened. Lay each softened wrapper on a damp kitchen towel or a clean surface to prevent sticking.
- Fill and roll the wrappers: Place 1–2 tablespoons of the apple filling in the center of each wrapper. Fold in the sides and roll tightly like a spring roll. Repeat until all filling and wrappers are used.
- Prepare rolls for baking: Place the rolls seam-side down on the prepared baking sheet. Lightly brush each roll with melted butter and sprinkle with granulated sugar. Spray lightly with cooking spray for extra crispiness.
- Bake the rolls: Bake in the preheated oven for 20–25 minutes, or until the rolls are golden brown and crispy on the outside.
- Cool and serve: Let the rolls cool slightly before serving. They are delicious warm, optionally served with vanilla ice cream or caramel sauce.
