Instructions
- Prepare the apple filling: In a medium skillet over medium heat, melt the butter. Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for about 5 to 7 minutes until the apples are soft and the mixture is bubbly.
- Thicken the filling: In a small bowl, mix the cornstarch with water to create a slurry. Stir it into the apple mixture and cook for another 1 to 2 minutes until thickened. Remove from heat and let cool slightly.
- Assemble the egg rolls: Place an egg roll wrapper on a clean surface with one corner facing you. Spoon about 2 tablespoons of the cooled apple filling onto the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the edge with a little water to ensure it sticks.
- Repeat assembly: Repeat the wrapping process with the remaining wrappers and filling.
- Heat oil for frying: In a deep skillet or pot, heat about 2 inches of vegetable oil to 350°F (175°C).
- Fry the egg rolls: Fry the egg rolls in batches for 2 to 3 minutes per side, or until they turn golden brown and crispy. Use tongs or a slotted spoon to turn them carefully.
