Instructions
- Prepare the apple filling: In a small saucepan over medium heat, combine the diced apples, brown sugar, granulated sugar, cinnamon, cornstarch, and lemon juice. Cook for 5–7 minutes, stirring occasionally, until the apples become tender and the mixture thickens into a luscious filling. Remove from heat and allow it to cool slightly to make handling easier.
- Assemble the egg rolls: Place an egg roll wrapper on a clean flat surface with one corner pointing toward you, forming a diamond shape. Spoon about 2 tablespoons of the apple filling near the center of the wrapper. Fold the bottom corner over the filling, then fold in both side corners tightly, and roll the wrapper up towards the remaining corner, sealing the edge with a dab of water to secure it firmly.
- Heat the oil: In a deep skillet or pot, heat vegetable or canola oil to 350°F (175°C). Use a thermometer for accuracy to ensure proper frying temperature. Enough oil should be added to submerge the egg rolls halfway.
- Fry the egg rolls: Carefully place the egg rolls into the hot oil in batches, avoiding overcrowding. Fry each side for 2–3 minutes, or until the wrappers turn a beautiful golden brown and become crisp. Use a slotted spoon or tongs to turn the egg rolls evenly during cooking.
