Description

This no-bake Apple Butter Cheesecake offers a luscious and creamy dessert with a deliciously spiced graham cracker crust and a smooth cream cheese and apple butter filling. Perfect for holiday gatherings or any special occasion, this recipe combines the flavors of cinnamon, lemon, and rich apple butter swirls for a refreshing twist on classic cheesecake.

Ingredients

Scale

Crust

  • 2 cups (204 g) graham cracker crumbs (12-13 full sheets, crushed)
  • ½ teaspoon cinnamon
  • ½ cup (113 g) unsalted butter, melted

Filling

  • 2 packages (8 ounces each) cream cheese, softened
  • 1 cup (200 g) granulated sugar
  • 2 cups (476 g) heavy cream
  • ¾ teaspoon fresh lemon juice
  • ½ cup (120 g) apple butter

Instructions

  1. Prepare the Pan: Spray a 9-inch springform pan with nonstick cooking spray to prevent sticking and ensure easy removal of the cheesecake once set.
  2. Make the Crust: In a medium bowl, combine the graham cracker crumbs and cinnamon. Add the melted butter and mix until every crumb is well coated. Press the crumb mixture firmly into the bottom and up the sides of the springform pan. Refrigerate the crust while preparing the filling to help it set.
  3. Prepare the Filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar using a hand mixer on medium speed until the mixture is smooth and creamy, with no lumps remaining.
  4. Add Cream and Lemon Juice: Gradually add the heavy cream and fresh lemon juice to the cream cheese mixture, continuing to beat for 1-2 minutes until the mixture is fluffy, light, and well combined.
  5. Assemble the Cheesecake: Pour the cheesecake mixture into the prepared crust, spreading it evenly. Drop large dollops of apple butter on top and use a knife or offset spatula to swirl the apple butter gently into the cheesecake, being careful not to scrape the crust.
  6. Chill: Refrigerate the assembled cheesecake for at least 6 hours, or preferably overnight, until it is firm and set before slicing and serving.

Notes

  • For best results, soften the cream cheese to room temperature before mixing to avoid lumps.
  • The apple butter swirl adds a beautiful flavor and design, but be gentle to maintain the crust’s integrity.
  • Allowing the cheesecake to chill overnight ensures it sets properly and improves the flavor development.
  • This cheesecake is best served chilled and can be stored in the refrigerator for up to 3 days.
